Ever since I can remember, I’ve loved being in the kitchen. The clinking and clanging of pots and pans are the notes to the symphony of my life. I would watch my mom intently from the kitchen island as she chopped vegetables and smashed garlic with her cleaver the size of my face or as ferociously flipped and scooped the stir fry from the sizzling hot wok. When it was just me and her, we would watch Food Network over dinner and provide unsolicited commentary on the latest competitor on Iron Chef or take notes as we learned how to make a no-fuss chocolate mousse from Nigella Lawson.

As a teenager I developed a so-called “baking phase”. I would bake a different dessert every weekend, scouring the internet for the best recipes, then sharing my finished products with friends at school. I always wanted to make the most complicated thing that took as many hours or required as many techniques as possible. My favourite past time was going to the kitchen ware store and begging my mom if I could buy the most interesting cooking or baking weapon to add to our home arsenal.

Now I’m here, as much of an adult as society would deem, and I never grew out of my “phase”. My “explore feed” on IG is 90% food content, 10% dog content; my favourite past time is still shopping for cooking and bake ware (I just have my own money now); and I’m still baking most weekends. My approach has changed a little since then – I no longer try to make the hardest things I’ve ever made in my whole life, but I still try to challenge myself to develop and refine recipes that I love to make and love to eat.

Dori Mori Bakery is my imaginary playground to create all the baked goods I love and to be able to share it with all of you! If I ever had a bakery, these would be the things I would want to serve. Some of these recipes are spontaneous combustions of the ideas in my head, from the internet, things I’ve seen in real life or chefs I’ve watched on YouTube, while others are classics that are tried and true, near and dear to my heart.

If anything at all, I hope that Dori Mori Bakery inspires you to have fun in the kitchen and to make the things that you enjoy! So here’s to baking together and trying new recipes I hope you’ll love 🙂
