The perfect addition to any milk tea drink.

INGREDIENTS
1/2 cup dry black tapioca pearls
2.5 L water
50 g muscovado sugar, or dark brown sugar

Preparing black tapioca pearls can be really easy, but it can also be a huge pain if you’re not following the instructions. Make sure to read the instruction for your specific brand of tapioca pearls because they can vary. The brand I used for this recipe is from Yi Feng – they’re not the easiest to cook, but if you want to try using them for this recipe… by all means. If you have better suggestions, please tell me. Anyhow, here we go!
PREPARE THE TAPIOCA PEARLS
- Prepare your black tapioca pearls as per the instructions on the package. Here are the instructions for mine:
- In a large pot, bring 2.5 L of water to a rolling boil. Then add black tapioca pearls to the boiling water and cook uncovered for 30 mins.
- After 30 mins, the pearls should be mostly translucent with a bit of white starch peeking in the centre.
- Take the pot off the heat and cover the lid. Allow the pearls to rest for 1 hour.
- TASTE TEST TIME! It should be soft, bouncy and chewy when fully cooked. If there is a dry, powdery texture in the centre, they are not fully cooked. If this happens, bring the pot back to a boil and cook until soft.
- Just before your pearls are done cooking, prepare an ice bath – grab a large bowl and fill with cold water and ice.
- Drain your tapioca pearls with a strainer, rinse with cold water and dunk them into the ice bath.
TIME TO MAKE 🤎 BROWN SUGAR PEARLS 🤎
- In a non-stick pan or shallow pot, add 45 g of muscovado sugar and cook at medium heat. Allow the sugar to caramelize and become a syrup. Stir regularly.
- Work quickly as you don’t want the syrup to burn, add the cooked black tapioca pearls and stir quickly. Don’t worry if the syrup hardens – this will naturally happen since the pearls are cooled. Simply cook until the hard syrup melts down again.
- Continue to stir the black sugar for another 20 mins (more or less) and transfer to a heat proof bowl to cool.
VOILA! All done. There are so many ways to use brown sugar pearls – you can add it to your favourite milk, plant milk, milk tea, regular tea drink… OR you can make Brown Sugar Boba Mochi Muffins with them. 😉
