Banana Oat Muffins with Swirled Peanut Butter and Jam


Makes 12 muffins

INGREDIENTS

2 ripe bananas
50 g (1/4 cup) vegetables oil
115 g egg, room temperature (~2 eggs)
60 g (1/4 cup) maple syrup
3 g (1 tsp) vanilla extract
157 g (1 1/4) cup oat flour
6 g (1 tsp) baking soda
1.5 g (1/4 tsp) salt
2.5 g (1 tsp) cinnamon
~85 g (1/3 cup) peanut butter
~110 g (1/3 cup) strawberry jam
A bit of rolled oats for sprinkling

METHOD

  1. Preheat the oven to 175C (350F) and grease a 12-cup muffin pan.
  2. In a bowl, mash your ripe bananas until it is becomes a paste. Add all the wet ingredients (oil, eggs, maple syrup and vanilla) and mix to combine.
  3. Add all the dry ingredients (oat flour, baking soda, salt and cinnamon) and fold to combine being careful not to over mix.
  4. Divide the batter evenly between the 12 moulds in the muffin pan.
  5. Take a little bit of peanut butter (or a lot… it’s up to you!) and dollop on top of each mould. Then take a little (or a lot) of your favourite berry preserve and dollop on top. Take a small fork or toothpick and swirl the peanut butter and jelly. Then top with a small sprinkle of rolled oats.
  6. Bake for 25 mins.
